Scott,
In a nutshell, XHTML is the conversion and modularisation of HTML 4.0 in XML
1.0. It is a work in progress, as can be seen by the recent discussion on
its return to the W3C. Others here will give you a much more insightful
description of XHTML.
WML is an implementation of XML 1.0 for use on handheld, wireless devices.
It is a core part of the Wireless Application Protocol and is currently
being implemented in a broad range of internet - based applications. WML is
the language of choice for WAP-enabled devices from Nokia, Ericsson etc
although not the only choice (HDML being an alternative).
WAP is in the process of being rolled out in Australia and is generating a
great deal of media coverage as the Next Big Thing.
Hope this helps
